Chargrilled Radicchio



2 heads Radicchio
1/4 cup Extra Virgin Olive Oil
1 Tbsp Balsamic Vinegar
2 Tbsp Shredded Asiago if desired

coarse sea salt
fresh ground pepper

Trim radicchio discarding outer leaves
Slice lengthwise into quarters

Preheat Grilling Pan or Griddle to hot

Drizzle Radicchio with about half of the olive oil and season with salt and pepper
Place Radicchio on pan and cook till inner leaves darken, about 2 minutes
Turn and cook other side for another 2 minutes.

Remove to serving plate and drizzle with Oil and Vinegar.
Sprinkle with Asiago
Serve as an appetizer or vegetable side dish.

Chicken Stew

Tired of the same old stew?
Try this it's a wonderful twist on an old favorite

3- carrots.............. diced
3- celery stalks.... diced
1- med onion........ diced
3-cloves garlic...... diced
2-bone in chicken breasts
26 ozs chicken stock
1-16 oz diced tomatoes
1 1/2 teaspoon dried basil
1 1/2 teaspoon tyme
1 bay leaf

cut veggies into pieces about the same size
saute veggies adding garlic last as it can burn

add stock, diced tomatoes
basil,tyme, bay leaf
add 2 chicken breasts
simmer 30 minutes

remove chick breasts
break apart, return to pot
mix well
serve with crusty bread
manga!!!!

Pesto


This is my pesto recipe

My most favorite dish in the whole world

4 cups of fresh basil
6 cloves garlic (or your preference)
1/4 cup olive oil.........more if needed to get consistency
you desire

all into food processor

I sometimes add pine nuts
but first i toast in a non stick pan to release flavor

boil pasta to aldente
drain
add pesto
fresh parmasano cheese
and ...manga

Grilled Tilapia Fillet


Tilapia Fillets (as many as you want to cook) Thawed
Salt and Pepper
Paprika
Garlic powder
Chopped parsley
Crushed red pepper

Heat a grilling pan over medium heat
(This will work with a George Foreman Grill just make sure to spray top and bottom and reduce cooking time to 3 minutes total)

Sprinkle both sides of Tilapia with salt and pepper and a generous dusting of garlic powder and paprika
Lightly Spray Grilling pan with cooking spray

Place Fish on pan, Grill for 3 minutes then turn and grill for 3 more minutes

Sprinkle with parsley and red pepper flakes and serve.

Zucchini Bread; low fat and luscious

I alter almost ALL quick breads and make them 100% moister and cut the fat content wayyyyy down by eliminating the OIL in the recipe and substituting it with ANY flavor (depending on the recipe you're making) with BABY FOOD!!! Applesauce works good too, but baby food has a silkier texture and a lot more flavor!

Zucchini Bread

Mix together & set aside:
2 cups white flour
2 tsp. baking powder
1 tsp. baking soda
1-1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ground cloves

In another bowl, add all ingredients below & mix well:
3 eggs
1/2 C. applesauce OR baby food (squash, bananas, applesauce, pears... whatever!)
1 C. white sugar
1/2 C. light sour cream
1 tsp. vanilla
2 C. peeled & shredded zucchini
(Add a cup of chopped walnuts, if desired)

Add the dry ingredients & stir gently until mixed well.

Pour batter in a greased & floured loaf pan and bake in a 325 degree oven for approx. 50-60 minutes - test center with toothpick & when it comes out clean, it's done. It may take a little longer- or not... it depends on your oven, so test the center and make sure it's not 'wet'. Cool in pan for 15 minutes, then remove.
