Shrimp Fettucine Alfredo



Shrimp OR Chicken Pasta Alfredo..

Green and Yellow pepper or Red.. Half of Each..Cut up in strips

Mushrooms (canned or fresh)

Garlic...to your taste

Onion.. 1 Med. Chopped large pieces..

Blanched Broccoli..about a cup..

1lb pasta...whatever you prefer

1/2 cup of chicken broth ..or boulion

1/3 cup of butter

1 small jar of classico alfredo sauce

Saute' garlic in Olive oil... as it starts to simmer al dente or a little beyond..add mushroom, peppers, onions and cook until almost done. In the mean time have your pasta cooking in a seperate pot. As you are simmering the other things ..add the broth a Quarter cup at a time... Add the butter.and Broccoli... You can add a little white wine also if you have it one hand..Add 1 small jar of Classico Alfredo sauce .then about a lb of Cooked large shrimp..OR Cooked Chicken ..it works well both ways.. I like to top mine with Asiago AND Romano. Serve with small salad, white wine and warm Italian bread.. ( Since I don't use recipe's much..I go by what I use for measurements..You can add or take away as you like.. The nice thing about this dish is that you can have it all done by the time the pasta is done cooking..: )

Jo's Sesame Shrimp W/ Fried Rice


1 c. uncooked white rice
4 T. sesame oil ,divided in 2
1 LB Large shrimp peeled and devined
2 T. teriyaki w/pineapple marinade sauce
2 t. fresg Lemon juice
2 T. kikoman soy sauce
1 Large egg
1 T. sesame seeds
opt . pea pods

1. cook rice according to directions put aside to cool.
2. In large skillet or wok heat 2 T. of sesame oil over med heat
add shrimp teriyaki sauce, lemon juice &salt and pepper to taste.
cook till shrimp are pink and not rubbery ,remove shrimp & sauce, put aside.
3. add remaining sesame oil to skillet ,add cooked cooled rice,soy sauce,& seeds.
cook and stir around a bit ,take egg scramble it up & drip it all around rice mixture,till cooked. cook rice until browned on bottom stir occasionally when sticks on bottom loosen with spatula.
4.spoon shrimp & sauce over fried rice ,sprinkle more seeds if desired & more soy sauce ( I do) if needed.
5. can add pea pods for different flavor or added color
Takes approx prep time 20-25 min & cook time 25-30 min
Serve as main dish or use as a side dish

Shrimp with basil & sundried tomato cream sauce


Pat dry 1 lb. medium raw shelled & deveined shrimp, tail removed.

In a skillet, heat 2 T. butter and 1 T. olive oil - when hot (med. heat), add to pan:
4 Tblsp. minced onion
2 garlic cloves, smashed/minced
Saute until translucent but not browned at ALL.
Add shrimp to pan - increase the heat and stir-fry the shrimp for a minute - maybe a little more (depending on the size of the shrimp), but only until they're barely cooked (not pink anymore)! Do NOT overcook them!

Remove the shrimp (only) to a plate and continue making the sauce.

To the pan drippings, add a splash (1/4 C.) white wine - (over medium heat) bring to a simmer. Season with salt and ground pepper. Add 6-8 leaves of minced fresh basil & 1/3 c. chopped sundried tomatoes. Keep stirring pan as it simmers 3-4 minutes, letting the flavors develop and the liquid reduce a bit. Stir in 1/2 cup heavy cream (whipping cream) and continue to cook & thicken for a few more minutes (shouldn't simmer vigorously... only slightly) until thick & creamy. Add the shrimp and let them heat through, another minute or so. (Double up on the ingredients if you want more sauce to spoon over pasta.) You can sprinkle fresh minced basil over the finished dish if you'd like.

This is delicious as is, or tossed with cooked linguine!

TIP: Trader Joe's carries a product that EVERYONE should keep in their freezer at all times - it's WONDERFUL!!! It's a little plastic 'tray' packet (approx. 3"x 5") of chopped basil - and it's frozen in a dozen or so tiny 'sections' like an ice cube tray.... you can pop out as many cubes as you need for a recipe (they defrost in a minute) and it's totally fresh tasting! It is FAR better than dried basil!!

Shrimp Ala Bina

This is perfect for a dinner party.

Ingredients:
Pasta
green peppers...red or yellow or combo of all
mushrooms
broccoli
garlic
white wine
butter
broth
onion 1 small

While cooking 1lb of spaghetti or linguine...

In a big pan or wok style pan..

Put olive oil in pan .about 1/4 of a cup.. Saute some garlic...then onion and gr, red, yellow peppers or whatever you wish..... Then add 1/4 cup of white wine and 1/4 cup of chicken broth or you can use bouillon if you want for more flavor. (2 cubes in half cup of boiled water). in the mean time..Blanch a head of broccoli and put on the side. Add mushrooms to the simmering peppers, onion .etc.. after all of this looks well simmered ..add 1/3 stick of butter...then add the broccoli...1lb of shrimp cooked ( large or med). I season with pepper..a little Italian seasoning. If needed add a little more wine or broth. After you put everything together..I like to thicken just a little with cornstarch and water..about 1/4 cup but only add what is needed for a slight thickening... Pour on top of pasta in a big pasta bowl.. It's a very attractive presentation and very tasty too.. Serve with a nice Chardonnay.. Serves 4

Vodka Sauce













2 Large Cans Tomatoes
2 Tbsn Olive Oil
1 Clove Garlic, Chopped
1 Small Onion, Diced
2 - 4 Basil Leaves
Salt and Pepper
1/2 Cup Vodka
1/2 Cup Heavy Cream (room temp)
1/2 Cup Grated Parmesan

In a large skillet heat oil
Add Garlic Stir a few times for 15 seconds
Add Onion till tender
Add Tomatoes and Basil
Heat to boil and continue boiling for 5 minutes
Simmer for 10 more minutes
Put sauce in blender and blend till smooth

Return Sauce to skillet bring to second boil
Add Vodka
Stir till Sauce boils again and cook for another 5-6 minutes stirring occasionally
Lower heat to simmer
Stir in Cream and simmer over low heat till sauce is heated through
Stir in Parmesan till melted and remove from heat.
Salt and Pepper to taste

Serve over pasta

Linguini with Schrimp and Artichoke Hearts

pasta w/shrimp, artichoke hearts, mushrooms,tomatoes,black olives
ingredients: 1b.pasta linguine or wheat
8oz. pkg fresh mushrooms or bella baby use half if want to
shrimp raw large sz. as per your preference
campari tomatoes if cant find plum is ok
lite olive oil
fresh basil
fresh whole garlic
black olives sliced as desired

cook pasta al dente first leave in pot
cook shrimp (shells removed) in olive oil with garlic till pink,add fresh mush,canned plain hearts stir fry for like 3 min till looks done
cut tomatoes in quarters roast or grill ,when done ,drain pasta keep a little bit of water in pot if you like it juicier add shrimp , mixture and roasted tomatoes , black olives , and serve with pecorino romano cheese fresh italian bread and your choice of wine!! should serve 4 but if your italian 2 !!
